Mole is considered one of the most representative dishes of Mexican cuisine all around the world. The evolution of mole sauce was possible thanks to a confluence of ingredients from all around the world: cinnamon from Sri Lanka, aniseed from the far east, clove from Indonesia, coriander and sesame seed from the middle east, and local ingredients such as chili peppers, peanuts, pumpkin seeds, and tortillas, just to name a few. Mole is the result of a slow culinary process, enriched through the centuries with contributions from all over the earth.
